I decided to try and bake a full eggplant without cutting it apart in pieces.
I took an eggplant made slits out of that and then within each slit I used some salt pepper just to coat the internals of the eggplant.
Then I took mozzarella cheese cut it into small slices and then I put it inside the eggplant I also added onions, garlic, tomato sauce, mint, some fennel bulb chopped up nicely.
Then I baked it in the oven three 400° for about 35 minutes.
It took a couple of iterations to see if things hade cooked inside. We haven't yet tasted it. but the final output looks very yummy.
